Our signature sweet, and the reason the shop carries its name. Fine besan batter is poured through a hand-beaten brass jhara into bubbling ghee, giving each droplet its round, even pearl. The boondhi is lifted the moment it turns gold, then rested in a light cardamom-and-saffron syrup so it stays soft without ever turning soggy. Made in 4kg batches, never more.
