Our signature sweet, and the reason the shop carries its name. Fine besan batter is poured through a hand-beaten brass jhara into bubbling ghee, giving each droplet its round, even pearl. The boondhi is lifted the moment it turns gold, then rested in a light cardamom-and-saffron syrup so it stays soft without ever turning soggy. Made in 4kg batches, never more.
Every pack is sealed at the kitchen and labelled with its batch date. Nothing sits in a warehouse — if it is not made this week, it is not shipped this week.
